I was concerned about an ongoing “mental fog” and forgetfulness I had – which is one of the symptoms of Hashimoto’s. I was having trouble losing weight and also felt very low in energy. Try this: Cut apples crosswise (don’t peel them—the skin is the richest source of pectin!), dredge in brown sugar, then pan-fry in coconut oil until tender; top with shredded basil and crumbled blue cheese. Spiralize a whole apple with skin, lightly steam in apple juice until tender, and serve with yogurt, hemp seeds, and blueberries as a breakfast noodle bowl. Simmer chopped apples, parsnips, shallots, and sprigs of thyme in broth until tender; remove thyme sprigs and purée until smooth; top with additional thyme and a dollop of crème fraîche.

Hypothyroidism is a secondary cause of dyslipidemia, typically manifesting in elevation of low-density lipoprotein and total cholesterol levels. It is clear that treatment resulting in the normalization of the serum TSH is associated with reduction in total cholesterol levels (54), but whether total cholesterol is fully normalized by l-thyroxine monotherapy is less well-defined. An analysis of 18 studies on the effect of thyroid hormone replacement on total cholesterol levels in overt hypothyroidism showed a reduction in the total cholesterol level in all 18 studies; however, in 14 of the 18 studies, the mean post treatment total cholesterol level remained above the normal range (>200 mg/dL [>5.18 mmol/L]) (55). These findings suggest that lipid measures are not fully restored despite normalization of the serum TSH (56). Whether the degree of dyslipidemia remaining in l-thyroxine-treated patients with a normal TSH is clinically significant is unknown, given that the benefit of thyroid hormone replacement in subclinical hypothyroidism is itself controversial (57, 58).
Goitrogenic foods can act like an antithyroid drug in disabling the thyroid function. They prevent the thyroid from using available iodine. It is made worse if you use a lot of salt because that causes the thyroid to swell. Do not eat these in large amounts if you are taking thyroid hormone replacement. It is thought that the enzymes involved in the formation of goitrogenic materials in plants can be destroyed by cooking, so cook these foods thoroughly if you want to eat them.
You may find that changing your diet will help. One suggestion is to reduce or eliminate sugar, limit fruit, dairy, and grains, and get your carbohydrates mainly from vegetables. Round out your diet with lean proteins and healthy fats. In addition, eating two to three meals a day, no snacks, and avoiding food after 8 p.m. seems to help balance hunger hormones and blood sugar—and promote fat burning. 
Over my several decades working as a Functional Medicine doctor, I can assure you that even in the toughest cases, you can heal your thyroid. Thyroid disease and disorder symptoms and signs depend on the type of the thyroid problem. Examples include heat or cold intolerance, sweating, weight loss or gain, palpitations, fatigue, dry skin, constipation, brittle hair, joint aches and pains, heart palpitations, edema, feeling bloated, puffiness in the face, reduced menstrual flow, changes in the frequency of bowel movements and habits, high cholesterol, hoarseness, brittle hair, difficulty swallowing, shortness of breath, a visible lump or swelling in the neck, tremors, memory problems, depression, nervousness, agitation, irritability, or poor concentration.
Soy for thyroid health is controversial: There's some research that suggests soy might negatively affect your thyroid gland under certain circumstances, like if you have an iodine deficiency. (Something to keep in mind: A 2011 study of vegetarians and vegans in the Boston area found that some vegans did have a mild iodine deficiency, most likely because they don't eat animal and dairy products). But other research presented at the 2014 Endocrine Society's annual meeting found that unless you have thyroid problems already, soy probably won't have any effect on it. Again, says Ilic, as long as you're eating normal amounts of soy, there's no reason to worry it'll hurt your thyroid.
I don’t know all your symptoms or health challenges, but if you have thyroid issues and if you are losing hair (alopecia areata?), you may want to consider getting tested for celiac disease. It is quite common for people to have celiac disease and thyroid disease. It’s important not to eliminate gluten from your diet before being tested as it would cause a false-negative test result.
Hyperthyroidism usually is treated with medications, surgery, or oral radioactive iodine. However, these treatments are imprecise and may cause the thyroid to secrete inadequate amounts of T3 and T4 and function insufficiently after treatment. Seventy percent to 90% of patients with Graves’ or thyroid cancer eventually need treatment for hypothyroidism as a result of treatment.6
Probiotic-Rich Foods – These include kefir (a fermented dairy product) or organic goat’s milk yogurt, kimchi, kombucha, natto, sauerkraut and other fermented veggies. Part of your hypothyroidism diet, probiotics help create a healthy gut environment by balancing microflora bacteria, which reduces leaky gut syndrome, nutrient deficiencies, inflammation and autoimmune reactions.
Two things to keep in mind: First, iron is tough for the body to absorb, but you can boost your absorption of iron-rich foods by pairing them with a source of vitamin C, Markley says. (Like tossing white beans with lemon vinaigrette, for instance.) And second, iron can make thyroid drugs less efficient. So be sure to take your thyroid meds at least four hours before or after eating an iron-rich meal .

Cruciferous vegetables, such as broccoli and cabbage, are full of fiber and other nutrients, but they may interfere with the production of thyroid hormone if you have an iodine deficiency. So if you do, it’s a good idea to limit your intake of Brussels sprouts, cabbage, cauliflower, kale, turnips, and bok choy, because research suggests digesting these vegetables may block the thyroid's ability to utilize iodine, which is essential for normal thyroid function.
